ANISE COOKIES 
3 eggs
1 c. sugar
2 c. sifted cake flour
1 tsp. baking powder
1 tbsp. crushed anise seed OR 1/2 tsp. anise oil

TO MIX: Beat eggs until light in a small mixing bowl. Add sugar gradually; continue beating 4-5 minutes with a rotary beater or an electric mixer on medium speed. Mix and sift flour and baking powder; add anise; fold into egg mixture.

TO SHAPE: Drop by teaspoonfuls about 1 inch apart on well-greased and floured sheets. Do not cover. Let stand overnight, or about 10 hours to dry.

TO BAKE: Place in a moderate oven, 350 degrees and bake 8 to 12 minutes. Usually the cookies separate into two layers during baking. top will be white, bottom golden brown. Let cookies cool on sheets before removing. Makes about 4 dozen.
