CHOCOLATE-CHIP RUM BARS | |
1/2 c. butter, softened 1/2 c. dark brown sugar 1 egg 1 tbsp. vanilla extract 1 tbsp. honey 1 tbsp. instant coffee crystals 2 tbsp. rum 1 c. graham cracker crumbs or crushed graham crackers 1 c. flour 1/2 c. cream cheese, softened (half of an 8 oz. pkg.) 2/3 c. semi-sweet chocolate chips Preheat oven to 325 degrees. Generously grease a 9x9 inch pan with shortening. (I used non-stick cooking spray.) In a medium bowl, beat butter and sugar until light and fluffy. Add egg, vanilla, honey, coffee and rum and beat until all ingredients are blended well. Add graham cracker crumbs and flour and beat until well blended. Add cream cheese and chocolate chips and beat well. Bake for about 40 minutes, or until a knife inserted at the center comes out clean. Let cool in pan before cutting. Cut into 12 bars. |
