1 med. potato
1 tbsp. butter
2 tsp. vanilla
1/4 tsp. salt
1-1 1/2 lb. 10X sugar
Peanut butter

1. Boil potato. While still hot mash.

2. In bowl, mix potato, butter, salt and vanilla. Use electric mixer.

3. Start adding 10X sugar. Mixture will be watery. Keep adding sugar until too stiff for beater, then use your hand.

4. When candy is thick enough roll between 2 sheets of waxed paper until about 1/4 inch in thickness.

5. Spread with peanut butter.

6. Roll up like a jelly roll.

7. Slice about 1 inch pieces.
