POTATO POT PIE 
8 oz. mushrooms, sliced
1 1/2 c. plus 2 tbsp. Miracle Whip dressing
2 c. chopped, cooked chicken or turkey
1 pkg. (10 oz.) frozen mixed vegetables, thawed & drained
1/4 c. chopped onion
1/4 c. flour
1 1/4 c. milk
1 tsp. dried basil leaves
1/2 tsp. each salt & pepper
1 1/2 c. (6 oz.) shredded cheddar cheese
2 c. hot mashed potatoes

Cook mushrooms and onions in 2 tablespoons dressing over medium high heat. Add flour and seasonings; gradually add milk, stirring until thickened. Stir in 1 cup dressing, chicken, vegetables and 1 cup cheese; cook 5 minutes. Spoon mixture into 1 1/2 quart casserole. Stir 1/2 cup dressing into potatoes. Top casserole with potato mixture, broil until golden. Sprinkle with remaining cheese; broil until cheese begins to melt. Serves 6.
