EASY CREAM OF POTATO SOUP 
10 med. potatoes
1 lg. onion
1 can Pet (evaporated) milk
1 stick butter
Salt
Pepper

Dice potatoes and onions. Cover with water and bring to a boil in a heavy pot. When the potatoes are done (tender when pricked with a fork prong) add the can of Pet milk and the stick of butter. When mixture is thickening add salt and pepper to taste.

Hi Maggie,

Add only enough water to barely cover the potatoes as they are cooking, then reserve a cup or two of the potato cooking water, depending upon how thick you'd like the soup. You can also use a little potato starch to thicken it up if you prefer.
