CREAM OF POTATO SOUP 
1 tbsp. & 1 tsp. butter
2 tbsp. flour
2 c. milk
1 c. diced cooked potatoes
1/4 tsp. salt
Pepper to taste
1 med. onion, diced

Melt butter in a heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly, until thickened and bubbly. Stir in potatoes, salt and pepper. Cook 5 minutes or until thoroughly heated. Yield about 2 1/2 cups.
