LOUISIANA DIRTY RICE 
2 lb. lean ground meat
5 c. water
1 c. shallots, chopped
1/2 c. parsley, chopped
1 c. chopped celery
1 1/2 c. rice
4 chicken livers
1/2 c. bell pepper, chopped
Salt and pepper, to taste

Brown ground meat and liver; add all other seasoning except rice. Let cook until seasoning is mixed well with meat. Add washed rice, salt, pepper, and water. Cover and simmer for about 30 minutes or until rice is cooked.
