CHILIES RELLENOS CASSEROLE 
6 beaten eggs
3 c. cream style cottage cheese
3/4 c. finely crushed rich round crackers (18 crackers), Ritz, etc.
2 c. green chilies, seeded, rinsed, chopped
1 c. shredded Cheddar cheese
1 c. shredded Monterey Jack cheese (or Mozzarella)
1 tsp. salt

Combine all ingredients. Bake at 350 for about 45 minutes (or until knife comes out clean). Sprinkle additional cheese last 2-3 minutes. Let stand 5 minutes. Serve with salsa and sour cream. Serves 6 to 8.
