ZUCCHINI BREAD 
2 1/2 c. zucchini (raw)
3 eggs
1 c. salad oil
1 1/2 c. sugar
3 tsp. vanilla
3 c. flour
1 tsp. baking soda
1/2 tsp. baking powder
1 tsp. salt
1 tbsp. cinnamon
1/2 c. raisins or dates
1/2 c. chopped nuts

Shred zucchini, mix with eggs, oil, sugar and vanilla. Blend well. Sift dry ingredients and add to zucchini mixture. Stir only until moistened. Fold in nuts and dates. Pour into 2 greased and floured loaf pans. Bake at 350 degrees about 1 hour.
