GINGERED PEPPER STEAK
4 lb. sirloin steak, cut into strips
1/2 lb. mushrooms, sliced
1 clove garlic, minced
2 tbsp. cooking oil
1/4 c. soy sauce
1/4 c. water
2 tbsp. cider vinegar
1 tbsp. cornstarch
1/2 tsp. salt
1/4 tsp. ginger
Dash of pepper
1 sm. onion, sliced
1 med. green pepper, cut into strips

Place meat, mushrooms, garlic and oil in a 2 quart casserole. Cover with waxed paper. Microwave on high for 6 to 8 minutes or until meat is no longer pink. Stir halfway through cooking. Mix together soy sauce, water, vinegar, cornstarch, salt, ginger and pepper until smooth. Stir into meat mixture. Microwave on high for 5 to 6 minutes or until thickened. Stir occasionally. Add onion and green pepper. Microwave on low for 10 to 15 minutes to blend flavors. Vegetables will be tender-crisp. Recipe yields 6 to 8 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
