SAUSAGE JAMBALAYA 
1 c. cooked rice
1 lb. sausage, cut into 2 inch pieces
1 med. onion, chopped
1/2 c. chopped green pepper
1/2 c. chopped celery
1 (8 oz.) can tomatoes
4 drops hot sauce

Heat skillet over medium heat. Add sausage, onion, peppers, celery, and saute until vegetables are tender. Add tomatoes, hot sauce, salt and pepper. Stir cooked rice into sausage mixture. Cook over low heat for 20 minutes, stirring frequently. Makes 4-6 servings.
