SAUSAGE JAMBALAYA 
2 lbs. smoked sausage
2 1/2 c. cooked rice
1 med. onion, chopped
1 whole clove garlic, minced
1 med. bell pepper, chopped
Big Al's seasoning
1 can cream of mushroom soup

Saute onions, garlic, and bell pepper until clear. Add sausage, cut in bite size pieces. Stir and fry. Add water as needed (but not very much). When sausage has cooked down, add cream of mushroom soup and cook over low heat 3 to 5 minutes. Add cooked rice and season to taste. Mix well and cook 3 more minutes. Serve at once.
