MEXICAN CHEF'S SALAD 
1 onion
4 tomatoes
1 head lettuce
4 oz. grated Cheddar cheese
8 oz. French or Thousand Island dressing (Catalina)
Hot sauce (optional) (La Victoria green taco sauce)
1 c. corn tortilla chips (taco-flavored Doritos)
1 lg. avocado
1 lb. ground beef
1 (15 oz.) can kidney beans
1/4 tsp. salt

Chop onion, tomatoes, lettuce. Toss with grated cheese, dressing and hot sauce to taste. Crunch and add chips. Slice and add avocado. Brown ground beef, add drained kidney beans and salt to ground beef and simmer for 10 minutes. Mix into cold salad. Decorate with extra chips, avocado and tomato. Serves 6.
