VERMONT NEW POTATOES | |
1 1/2 lbs. tiny new potatoes 1/4 lb. slivered baked ham (smoked) 3 tbsp. butter, room temperature Ground pepper to taste 3 tbsp. chopped chives 3 tbsp. chopped parsley 2 tbsp. chopped sage Scrub potatoes. With potato peeler, cut away a 1/2 inch strip around center of each potato. Heat water to boiling. Drop the potatoes in. Water should cover potatoes about 2 inches above. Add ham. Cook until potatoes are tender, about 25 minutes. Drain. Put potatoes and ham with butter, white pepper. Sprinkle with chives, parsley and sage. Save broth for other uses. |
