YAM PRALINE PIE 
2 eggs
1/2 c. granulated sugar
1/2 c. light brown sugar
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. ginger
1/4 tsp. salt
2 c. cooked & mashed fresh yams (about 4 med.)
3/4 c. milk
1 c. light cream
1 9" unbaked pastry shell

In a large mixing bowl beat in granulated sugar and brown sugar, spices and salt. Blend in yams. Gradually stir in milk and cream. Pour into unbaked pastry shell. Bake at 400 degrees for 10 minutes. Reduce heat to 350 degrees and bake 20 minutes.

TOPPING:

1/3 c. chopped pecans
1/3 c. packed light brown sugar
3 tbsp. soft butter

Mix together chopped nuts, brown sugar and butter. Stir until mixture crumbles. Sprinkle praline topping over surface of pie. Continue baking 20-25 minutes or until knife inserted near center comes out clean. Cool completely before serving.
