YAM PIE 
3 eggs
2/3 c. sugar
1 1/2 tbsp. melted butter
1 c. cooked, mashed yams
1/2 c. light corn syrup
1 1/2 tbsp. flour
Few grains salt
1 tsp. cinnamon
1/4 tsp. nutmeg
1/2 tsp. vanilla
1/4 c. pecans or walnuts
9 inch unbaked pie shell

Beat eggs, then add sugar, yams, butter, and syrup. Stir in flour, salt, spices, and nutmeg. Pour into shell and bake at 375 degrees for 15 minutes. Remove from oven; sprinkle with nuts. Brush lightly with corn syrup and bake at 350 degrees for 25-30 minutes longer.
