APRICOT PORK CHOPS 
6 med. thick pork chops
1 med. can apricot halves
Flour
1 med. onion, finely chopped
2 tbsp. soy sauce
1 green pepper, sliced thin

Trim the chops of fat and shake chops in a paper bag, with flour, salt and pepper. Brown them in the trimmed fat, then add soy sauce, apricots and onions. Simmer 1/2 hour, covered and 1/2 hour, uncovered. Add green pepper 15 minutes before chops are done. Serves 6.
