SAUSAGE POTATO SOUP | |
2 tbsp. olive oil 1 c. chopped onion 1/2 c. chopped celery 1/2 c. chopped carrots 1 clove garlic, minced 6 c. chicken broth 1 1/2 lbs. potatoes, cut into cubes 1 lg. smoked sausage, cut into 1/4-inch rounds 1 (10 oz.) pkg. chopped kale, spinach or mustard greens (frozen) In large pot cook onion, celery and carrots in olive oil for about 5 minutes. Add broth, garlic and potatoes. Bring to a boil and simmer for 30-35 minutes. Add sausage and spinach; cover and simmer until vegetables are defrosted and heated through. |
