ZUCCHINI BREAD | |
1 c. salad oil 3 eggs, slightly beaten 2 c. sugar 2 c. grated raw zucchini 1 tsp. vanilla 3 c. flour 1 tsp. baking soda 1/2 tsp. baking powder 1 tsp. salt 2 tsp. ground cinnamon 1 c. pecans Combine oil, eggs, sugar, zucchini and vanilla in a large bowl. Blend well. Sift flour, baking powder, soda, cinnamon and salt. Blend well. Spoon batter into 2 well greased loaf pans. Bake at 325 degrees for 1 1/2 hours. |
