PEPPER & CHEESE SOUFFLE 
2 cans Ortega chilies
2 c. grated Jack cheese
8 eggs
2 tbsp. flour
1 c. milk
Tabasco

Mix together first so it won't lump.

Butter 13"x9" casserole dish. Spread chilies over the bottom. Make one layer of Jack cheese. Beat the eggs well, then add flour and milk mixture, pour over cheese. Add Tabasco if desired. Sprinkle with paprika. Set in a large pan of water and bake at 350 degrees for 45 to 60 minutes until set.
