CARROT CAKE AND ICING 
2 c. flour
2 c. sugar
1 1/2 c. oil
1/2 tsp. salt
1 tsp. cinnamon
1 tsp. baking soda
4 eggs
2 c. grated carrots

Sift all dry ingredients. Add all other ingredients and mix at least 3 minutes. Bake 45 minutes at 325 degrees in 2 or 3 (8 inch or 9 inch) layer pans.

ICING:

1 lg. cream cheese
1 box powdered sugar
1 tsp. vanilla
1/2 c. butter
1/2 c. pecans

Mix icing ingredients with electric mixer until smooth. Stir in 1/2 cup pecans, chopped. Ice cooled cakes.
