DAY AHEAD GREEN SALAD 
1 sm. head Iceberg lettuce, bite sized pieces
1 bunch fresh spinach, bite sized pieces
10 oz. pkg. frozen peas, uncooked
2 bunches green onions, chopped
8 slices bacon, cooked and crumbled
4 hard boiled eggs, sliced

DRESSING:

1 c. sour cream
1/2 c. mayonnaise
1 pkg. Italian salad dressing mix (Good Seasons preferred)

In a long glass dish, layer lettuce, spinach, peas, onions, bacon, and eggs. Mix salad ingredients together and spread over top. Seal tightly with plastic wrap and refrigerate for 24 hours. Sprinkle with croutons before serving.

I would decrease the sour cream to 1/2 cup next time I make this salad. The salad was very thick and it took away from the other flavors in the salad. Also, the salad needs to be set out ahead of serving time to allow the dressing to thin out and mix better with the other ingredients.
