ZUCCHINI SOUP | |
1/4 c. butter 1 c. onion 1 - 16 oz. can chicken broth 1 c. potatoes, cubed 6 c. zucchini, cubed 1 tsp. salt 1 tsp. dill weed 1 tsp. basil dash of pepper Sauté onion in butter. Add chicken broth and potatoes. Simmer for 20 minutes. Add zucchini and spices and cook for another 20 minutes. If necessary thin with milk or cream. |
