SUMMER SQUASH MEDLEY | |
2 tsp. reduced-calorie butter Vegetable cooking spray 1 2/3 c. sliced yellow squash (about 2 med.) 1 2/3 c. sliced zucchini (about 2 med.) 1/2 c. julienne cut red bell pepper 1/4 tsp. salt 1/4 tsp. garlic powder 1/4 tsp. dried whole basil 1/4 tsp. dried whole oregano Melt butter in a large nonstick skillet coated with cooking spray. Add squash, zucchini and bell pepper; saute over medium-high heat 5 minutes or until crisp-tender. Remove from heat; stir in remaining ingredients. Yield: 6 servings. (About 22 calories per 1/2 cup serving.) |
