STUFFED BAKED APPLES 
4 baking apples (for example, Rome, Beauties or Greening apples)
1/2 c. prepared mincemeat
1 c. apple cider
2 tbsp. butter

Wash and core apples. Pare upper half of each apple to prevent splitting. Place apples upright in small baking dish. Fill cavities in apples with mincemeat. Pour apple cider around apples; dot tops of apples with butter. Bake at 375 degrees for 30 to 40 minutes, basting with pan juices several times during cooking. Makes 4 servings.
