FLAVORFUL BAKED FISH 
3 lb. fish (ideal for four 9-oz. catfish or perch)
1 egg
1 tbsp. water
1/2 c. crushed Saltine crackers
1/4 c. grated Parmesan cheese
2 tbsp. butter
2 tbsp. chopped green onions or dried minced onions
Dash of salt
Dash of pepper
Dash liquid hot pepper sauce
Dash Worcestershire sauce

NOTE: Crushed corn flakes or flavored croutons can be substituted for Saltine crackers.

Mix egg and water in bowl. Dip fish in egg mixture. Lay fish in pan. Salt and pepper. Sprinkle minced onion and Parmesan cheese over fish. Cover with cracker crumbs. Spoon butter over top. Add dash of liquid hot pepper sauce and Worcestershire sauce. Bake 25-30 minutes at 375 degrees.

This recipe can be made in a microwave if leave off cracker crumbs until nearly done, then add crumbs and brown in the oven at higher temperature briefly.

Since microwave ovens vary in power, you may need to adjust your cooking time.
