AEGEAN BAKED FISH 
2 tbsp. olive or vegetable oil
1/2 c. dry bread crumbs
2 lb. fish fillets
1 tsp. salt
1 tsp. dried oregano leaves
1/4 c. lemon juice
1 (8 oz.) can tomato sauce
1/2 c. snipped parsley
2 cloves garlic, finely chopped
2 tbsp. olive or vegetable oil
1/2 tsp. salt
1/4 tsp. pepper
1/4 c. dry bread crumbs

Pour 2 tablespoons oil evenly into rectangular baking dish, 13 x 9 x 2 inches. Sprinkle 1/2 cup bread crumbs evenly over oil. Pat dish dry with paper towels. Arrange fish in single layer in dish; sprinkle with 1 teaspoon salt and the oregano. Pour lemon juice over fish.

Mix tomato sauce, parsley, garlic, and 2 tablespoon oil, 1/2 teaspoon saute and the pepper; spoon over fish; sprinkle with 1/4 cup bread crumbs. Cook, uncovered, at 350 degrees until fish flakes easily with fork, 30-40 minutes. Serve on warm platter. Garnish with lemon slices and olives. 10 servings.
