SUMMER SCALLOP 
2 med. zucchini
6 med. tomatoes
4 med. onions
3 eggs
1 c. shredded Cheddar
1/4 c. water
Salt, garlic powder
Pepper
1 stick butter

Quarter zucchini. Layer in oblong pan. Put layer of sliced tomatoes on top of zucchini. Put layer of onion on top of tomato.

Beat eggs with water. Season vegetables. Add egg mixture. Dot with stick of butter. Cover with foil and bake at 350 degrees (preheat) for 45 minutes. Remove foil, sprinkle cheese over vegetables and return to oven until cheese is melted (about 15 minutes). Freezes well.
