ZUCCHINI FRITTERS 
2 med. zucchini
3 tbsp. mild, light flavored olive oil
1 clove garlic, minced
1/3 c. grated Parmesan cheese
1/4 tsp. dried basil leaves

Coarsely grate the zucchini and press it in a strainer to remove excess liquid. Combine the zucchini, 2 tablespoons of the oil, garlic, cheese and basil in a bowl. Shape the mixture into 3 inch fritters or patties and brown on both sides in the remaining olive oil in a skillet or griddle. Serve hot. Makes 4 servings.
