CONFETTI VEGETABLE CASSEROLE 
2 zucchini squash
1/2 head cauliflower
2 yellow squash
1/2 bell pepper
1 med. broccoli stalk
8 oz. mushrooms
1/2 yellow onion
2 tomatoes, cut into wedges
1/2 or more c. Parmesan cheese

Layer sliced vegetables and flowerets alternating colors in a glass casserole dish. Sprinkle Parmesan cheese on top. Season to taste with lemon pepper, tarragon, dill weed, oregano or other favorites. Cover with plastic wrap and microwave on high for 14 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
