POTATO DUMPLINGS 
3 c. mashed potatoes
2 eggs
A little salt
1/4 - 1/3 c. cream of wheat
1/2 c. flour or more

Mix together. Spoon onto floured surface and shape into balls. Sprinkle with flour. Carefully place into a large kettle of boiling water and cook until they float to the top. (Do not add too many at a time.) Remove with a slotted spoon. The amount for cream of wheat and flour may vary, depending on how moist the potatoes are.
