RICH POTATO DUMPLINGS 
2 slightly beaten eggs
3 c. cooked, mashed potatoes
2 c. flour
1 tsp. salt
1 c. butter, melted

Mix potatoes and eggs and blend well. Mix the flour and salt and stir into the potato mixture. Roll into a 1 1/2 inch roll and cut into 1 inch pieces. Drop the dumplings gradually into boiling water. Cover and boil for 15 to 20 minutes or until completely cooked. Drain and roll in the butter.
