COOKED POTATOES DUMPLINGS 
2 c. flour, sifted
4 c. mashed potatoes
1 egg
Pinch of salt
2 1/2 tbsp. butter
2 tbsp. bread crumbs

Mix mashed potatoes with flour. Add salt and knead in egg. Roll out on a floured board; cut and shape into small balls or into pencil size rolls, cut into 2" lengths. Drop the dumplings into boiling salted water. Cook until firm, then drain. Pour hot water over and drain again. Arrange on a heated platter and dot with bread crumbs browned in butter. Serve immediately.
