NO-COOK BLUE CHEESE POTATO SALAD | |
2 lbs. Safeway sour cream potato salad 4 stalks celery, chopped 1 med. red apple, unpared and coarsely chopped 1/2 med. onion, minced 2 tbsp. green pepper, chopped 4 oz. blue cheese, crumbled Splash of lemon juice (about 1/2 tsp.) Extra mayonnaise, if necessary Prepare the day before you want to serve this; it takes time to let the flavors mingle. Mix all ingredients together and chill overnight. If salad seems too dry, add extra mayonnaise until it is the consistency you like. This keeps well in the refrigerator for days. Serves 6 to 8 generously. |
