POLISH SOUP 
1 c. diced potatoes
1/4 c. thinly sliced onion
2 tbsp. butter
1 tbsp. chopped parsley
1 tbsp. chopped pimiento
1/2 tsp. paprika
1 (10 1/2 oz.) can condensed consomme
1/2 can water
Sour cream for garnish

Cook potatoes and onion in butter until onion is golden. Stir in parsley, pimiento and paprika. Add consomme and water; cover and simmer until potatoes are done, about 10 minutes. Garnish each serving with sour cream.
