CAFE TUNA SALAD 
1 tbsp. olive oil
1 onion, diced
1 yellow pepper, chopped
1 green pepper, chopped
1/2 tsp. marjoram
1/2 tsp. salt
1/4 c. lemon juice
1 tbsp. Dijon mustard
1/2 tsp. sugar
2 (6 1/2 oz.) cans tuna in water

Saute peppers and onions in oil. Add spices and simmer 5 minutes. Add tuna and gently toss. Great to stuff a tomato or serve on a bed of leaf lettuce.
