CRUNCHY POTATO CASSEROLE 
4 slices bacon, cooked and crumbled
1 tsp. salt
Pepper to taste
1 med. onion, chopped
1 egg
1 c. grated cheddar cheese
4 lg. baking potatoes, grated
1/2 c. milk or half and half
1/4 c. dry bread crumbs
Butter

Lightly beat egg and milk and mix with all other ingredients except butter. Turn into a greased 12 x 8 x 2 inch baking dish and dot the top with butter. Bake at 375 degrees for about 45 minutes, or until potatoes are cooked and top is golden.
