ZUCCHINI QUICHE 
2 c. zucchini, sliced thin
1 c. onion, sliced
3 tbsp. olive oil
1 clove garlic, minced
1 1/2 tsp. salt
4 eggs, beaten
1 c. milk
1 c. heavy cream
1/2 c. Mozzarella cheese, grated
10 inch pie crust

Saute zucchini, onion, and garlic in olive oil. Season with salt. Cover bottom of pie crust with this mixture. Combine remaining ingredients and pour into pie shell. Bake in preheated 375 degree oven for 30-35 minutes until custard is set. Serve hot or cold.
