CAJUN MEAT LOAF | |
2 tbsp. butter 1/2 lg. onion, chopped 1/2 c. green pepper, chopped 1 tsp. salt 3/4 tsp. cayenne pepper 1/2 tsp. dried thyme, crumbled 1/2 tsp. freshly ground pepper 1/4 tsp. ground cumin 1 lb. lean ground beef 1 egg, beaten to blend 1/2 c. fine dry bread crumbs 1/2 c. catsup 1 tsp. Worcestershire sauce Preheat oven to 375 degrees. Melt butter in heavy medium skillet over medium heat. Add next 7 ingredients and cook until vegetables are tender, stirring frequently, about 10 minutes. Combine meat, egg, bread crumbs, 1/4 cup catsup and Worcestershire sauce in medium bowl. Blend in sauteed vegetables. Form mixture into loaf 1 3/4 inches high and 5 inches wide in baking dish. Bake 20 minutes. Spread top with remaining 1/4 cup catsup and bake for 40 more minutes. Makes 2 to 4 servings. |
