CAJUN MEATLOAF 
2 tbsp. butter
1/2 lg. onion, chopped
1/2 c. chopped green bell pepper
1 tsp. salt
3/4 tsp. cayenne pepper
1/2 tsp. dried thyme
1/2 tsp. ground pepper
1/4 tsp. ground cumin
1 1/4 lb. lean ground beef
1 egg, beaten to blend
1/2 c. fine dry bread crumbs
1/2 c. catsup
1 tsp. Worcestershire sauce

Preheat oven to 375 degrees. Melt butter in heavy medium skillet over medium-low heat. Add next 7 ingredients and cook until vegetables are tender, stirring frequently, about 10 minutes.

Combine meat, egg, bread crumbs, 1/4 cup catsup and Worcestershire sauce in medium bowl. Blend in sauteed vegetables. Form mixture into loaf 1 3/4 inches high and 5 inches wide in baking dish. Bake 20 minutes. Spread top with remaining 1/4 cup catsup and bake for 40 more minutes. Makes 2-4 servings.

Loved this meatloaf. Moist, very moist. Was a lil worried about the amount of cayenne, but it wasn't so hot that I couldn't enjoy it. Just the right amount of heat. Never made a meatloaf like this before, but I will be making this again. Did I mention how very moist it is. Thanx for this fantastic recipe.
