CARROT - RAISIN SALAD | |
2 c. grated carrots 1 c. unsweetened crushed pineapple, drained 1/2 c. raisins 1 (8 oz.) carton plain low-fat yogurt 7 lettuce leaves (opt.) Combine carrots, pineapple and raisins; mix well. Chill for 2 to 3 hours. Stir in yogurt and serve on lettuce leaf, if desired. Yield: 7 servings. Each serving: 1/2 cup. Each serving may be exchanged for : 1 fruit, 1 vegetable. |
