QUICK, EASY SPOONBREAD 
Preheat oven to 400 degrees. Place 1 stick butter in an 8"x8"x2" glass baking dish in oven.

Mix 1 cup self-rising cornmeal with 1 cup milk and 1 cup water. Bring to boil over medium heat. Cook until very thick.

Add 1 cup milk and 1 egg, beaten together. Pour into hot baking dish with butter and bake 25 to 30 minutes. Serve immediately.
