BISCOTTI (ITALIAN BISCUITS) | |
4 c. flour 1 2/3 c. sugar 4 eggs, beaten one at a time (med. eggs) 1 c. chopped almonds 2 tsp. baking powder 2 tsp. lemon juice 1 c. oil (Wesson or Crisco) Mix baking powder and flour. Mix sugar and oil well. Add well beaten eggs, one at a time. Add other ingredients. Mix well. Then add almonds. Oil your hands and shape mixture into 6 long loaves (about 1 1/2 inches wide and 1/2 inches high). Place on 2 greased cookie sheets. Bake at 350 degrees for about 1 hour. Remove from oven, gently place each loaf on cutting board and slice diagonally about 1/2 inch apart. (I use electric knife to get nice even cookies.) Place back on cookie sheets, laying each cookie on its side and bake for 15 minutes more until lightly browned. Let cool. Makes 40-60 cookies (hard biscuits) which are great for dunking in coffee or wine. |
