NATCHITOCHES BUTTERMILK PRALINES 
3 c. sugar
3/4 light corn syrup
1 tsp. baking soda
2 tbsp. butter
1/8 tsp. salt
1 tsp. vanilla
4 c. nuts, chopped
1 c. buttermilk

Combine all ingredients and cook to a softball stage or 236°F. Remove from heat and cool about 20 minutes. Beat until mixture loses its gloss; drop onto wax paper.

Yields 1 1/2 dozen.
