CREAM CHEESE COOKIES | |
1 c. butter, softened 3 oz. cream cheese, softened 1 c. sugar 1 egg yolk 2 tbsp. vanilla extract 2 1/2 c. sifted flour Combine butter, cream cheese, sugar, egg yolk and vanilla in mixer bowl. Beat until light and fluffy. Add flour gradually, beating until well mixed. Chill dough until firm enough to handle. Shape into 1 inch balls. Place 2 inches apart on cookie sheet. Press center of each with thumb to flatten. Bake at 325 degrees for 25 minutes or until golden brown on bottom. May place a small amount of preserves in indentation or my favorite topping - see below. May substitute almond extract for vanilla. Yield: 36 cookies. My favorite topping: NESTLE'S SEMI-SWEET CHOCOLATE CHIPS: 6 oz. Nestle's semi-sweet chocolate chips Melt in microwave. Cool slightly and spoon into a pastry bag. Squeeze a small amount in indentation of each cookie. Spring Garden Elem. |
