REUBEN QUICHE 
1 (9 inch) uncooked pie shell
1 tbsp. caraway seed
1 (8 oz.) can corned beef, shredded
1 tbsp. Dijon-style mustard
3/4 c. sauerkraut, squeezed and drained
2 c. Swiss cheese, grated (8 oz.)
2 eggs, beaten
1 c. cream
1 tsp. grated onion
1/2 tsp. dry mustard

Sprinkle caraway seeds over pie crust. Prick crust and bake at 375 degrees 7 minutes. Fill pie shell with canned beef. Spread mustard over meat; top with sauerkraut and cheese. Mix together eggs, cream, onion and mustard. Pour into pie shell over canned beef and sauerkraut. Bake at 375 degrees for 40 minutes. Let stand 5 minutes before serving.

Serves 6-8 people.
