CORNED BEEF 
1 Brisket of beef, any size
1 c. orange juice
1/4 c. Meyers rum
2 tbsp. Karo syrup
2 tbsp. brown sugar

GLAZE:

1/2 jar orange marmalade
1 tbsp. brown sugar
1 tbsp. Karo syrup
1/2 tsp. ginger
1/2 c. orange-pineapple juice
1 tbsp. Meyers rum

Place brisket of beef in a kettle and cover with cold water. Bring to a boil and let boil for 15 minutes. Drain water. Replace water to almost cover meat. Add orange juice, rum, Karo syrup, and brown sugar. Simmer for 1 1/2 to 2 hours. Remove to baking pan. Mix glaze ingredients thoroughly and pour over meat. Bake at 325 degrees for 30 to 45 minutes.
