40 lg. marshmallows 2 (6 oz.) pkgs. lime gelatin 1 (8 oz.) and 1 (3 oz.) pkg. cream cheese 1 (20 oz.) and 1 (8 oz.) can crushed pineapple, drained, reserve juice 1/2 pt. whipping cream 1 c. chopped pecans Melt marshmallows and lime gelatin in 7 cups boiling water. Stir until completely dissolved. Refrigerate until set. At least 1 hour before ready to serve, whip the gelatin-marshmallow mixture in a large bowl using an electric mixer. Soften cream cheese with a fork, adding a little pineapple juice to make it soft enough to whip. Add to gelatin mixture and whip until well blended. Fold in drained pineapple, whipped cream and pecans. Chill until set. |
