40 lg. marshmallows 2 lg. pkgs. lime Jello 1 lg. + 1 sm. size Philadelphia cream cheese 1 lg. + 1 sm. can crushed pineapple 1/2 pt. whipping cream 1 c. chopped pecans Melt marshmallows and lime Jello in 7 cups boiling water. Stir until completely dissolved. Set aside to congeal. Next day, later or at least 1 hour before serving. Whip congealed Jello with mixer and add softened cream cheese. Work cream cheese with fork and a little pineapple juice to make it soft enough to whip with Jello. Fold in pineapple, pecans and whipped cream. Mary Crowley (founder of Home Interiors & Fits) won the best cook award with this recipe 30 years ago. Perfect for family reunions or church dinners. Make exactly as instructed. Do not substitute. |
