WEST COAST BROILED FLANK STEAK 
1 flank steak, about 1 1/2 lb.
1 onion, thinly sliced
1 tsp. grated lemon peel
1/2 c. fresh squeezed lemon juice
2 tbsp. sugar
1/2 tsp. salt
1/2 tsp. salt
1/2 tsp. oregano, crushed
1/8 tsp. coarse black pepper
2 tbsp. soy sauce
1 tbsp. butter

Trim any fat or membrane from the steak. With knife, score steak 1/8 inch deep on both side in diamond design. Layer half of onions in marinating dish, place steak on onions, cover with remaining onions. Combine remaining ingredients, except butter; pour over steak and onions. Marinate 2 to 3 hours, turning several times.

Remove steak from marinade. Drain onions and reserve. Place steak on cold broiler pan, 3 to 5 inches from heat in preheated broiler. Broil 3 to 5 minutes on each side. Steak can also be barbecued. Meanwhile, saute onions in butter until soft. To serve, cut steak across grain in very thin slices; top with onions.

Round steak may be substituted for flank steak.
